A cheap recipe based on readily-available ingredients, which can be prepared in just 20 minutes.
As well as a substantial single course, it could be served as an appetiser or, for those who like to start the day with a tasty savoury dish, as a hearty energy-filled breakfast.
- 5 eggs
- 500 g of potatoes
- 50 g of grated cheese
- 80 g of butter
- 5 ml of cream
- black pepper
- fresh thyme
Brush, wash and peel the potatoes, then steam them to prevent them from absorbing too much water. After they are cooked, mash the potatoes. Add salt and pepper.
Add a knob of butter, 3 tablespoons of cream, an egg and grated Parmesan cheese. In a baking tray covered with baking paper, distribute the mixture forming lots of spirals using a pastry bag. Draw another round of mixture around each one.
Brown it in a preheated oven at 180°C for 20 minutes. Melt the remaining butter in a frying pan, pour in the eggs and cook them over low heat, scrambling them for 2 minutes. Combine the cream, stirring until a thick paste is formed.
Fill the potato nests with a spoonful of egg mixture, adding fresh thyme and black pepper.
